If you are looking for some vibrant colors in your food then there are these two super root veggies – carrot and beet root. Both beet and carrot greens are also edible and highly nutritious. Both are available in a range of colors from golden yellow to deep purple and provide abundant health benefits. Beet contains high amount of vitamin C, vitamin B- Complex (folate) that is important for synthesis of DNA. Beet juice may increase blood flow to the brain and help prevent dementia -the body converts nitrates in beets to nitric oxide, a compound that relaxes arteries and improves blood circulation and oxygenation within the brain. Carrot on the other hand is very important source of beta-carotene that helps in vision. Our body uses beta-carotene, the orange pigment in carrots, to produce vitamin A. It is also good source of Vitamin C, Vitamin K, vitamin B8, pantothenic acid, folate, potassium, iron, copper, and manganese.

They both are rich with fibers and helps to get rid of fat. Prepare carrot and beetroot juice for best benefits. Or eat raw carrot -add to salads, prepare curry, desserts, mix with lentils add seasoning and eat. Beetroot – grate and mix with yogurt, prepare juice, curry with spice and eat.
