This summer consider drinking jaljeera

This summer consider drinking jaljeera

During summer time apart from drinking good lemon juice, coconut water, fresh fruit juice try jaljeera drink.

It is common all natural ingredient drink from North Indian regions.

Street vendors keep jaljeera in earthen pots to keep the drink cool. It also will be served generally with golgappa or pani puri.

Jaljeera drink contains good stuffs that help to overcome indigestion and keeps intestine toxin free.

What ingredients present in jaljeera?

  1. Cumin seeds -1.5 tsp
  2. Fennel seeds- 1 tsp
  3. Dry mango powder (amture powder) -1/2 tsp
  4. Black pepper -1/2 tdp
  5. Ginger – ½ inch
  6. Black salt – as per your taste
  7. Tamarind – ½ Tbs
  8. Fresh mint – ¾ cup
  9. Coriander chopped -1/2 cup
  10. Asafetida – little
  11. Lemon juice or tamarind juice
  12. Cardamom powder – little
  13. Boondi – for taste ½ cup

To prepare jaljeera:

  1. Prepare masala powder using these ingredients – cumin, fennel, black salt, black pepper, cardamom and amchur.
  2. Grind mint, ginger and coriander leaves to a paste.
  3. Now mix all grinded paste, masala powder, asafetida and add lemon juice.
  4. Add 3 to 4 cups of chilled water and strain mix if needed.
  5. Keep jaljeera in the fridge to chill it further.
  6. Add boondi and pinch of chaat masala while serving.

If you see list of ingredients that goes in jaljeera preparation, all ingredients have good medicinal benefit.

  • Cumin: Reduces bloating and gas
  • Ginger: Reduces nausea, abdominal cramps, arthritis, gas and bloating. Reduces body inflammation.
  • Amchur powder: Contains Vitamin C and boosts energy
  • Asafetida : Reduces gas and indigestion
  • Black salt: Helps in easy digestion of food. Reduces heart burn and removes toxins
  • Mint: Reduces indigestion and gas. It acts as coolant and soothing herb. It increases bile flow and eased digestion. And, another benefit of mint is it fights cholesterol.
  • Coriander: Reduces gas and bloating. It is a very good coolant and helps in removing toxins by improving kidney function.
  • Tamarind juice: Reduces constipation and helps in digestion. It also supplies Vitamin C
  • Fennel: It contains fiber that helps to lower cholesterol in blood. It also eases indigestion and promotes healthy digestion. Fennel also known to reduce fat in the body.
  • Cardamom powder: Even though the amount is less, cardamom helps to keep mouth fresh and reduces nausea.

One of the main reason to drink jaljeera is to reduce fat and burn the calories. Try making jaljeera at home to get all the above benefits.

This week grandma has some more cooking tips that makes your life easy while cooking in kitchen.

Add these 15 easy cooking tips to your list and keep it handy.

  1. While cooking lentil add a tea spoon of cooking oil with water. Adding little oil helps lentil to cook properly.
  2. Before boiling milk rinse vessel in water once. Little water vapor in milk container avoids cream sticking to container side.
  3. To remove extra salt from soup or sambar add few pieces of potato and boil the dish.
  4. To avoid eggplant turning black, put few one or two tsp of milk in water and immerse cut pieces in this water containing milk.
  5. To avoid smashing eggplant while cooking, after immersing water remove pieces and dry them on a paper towel for couple of hours.
  6. While frying fritters add a tea spoon of clarified butter (ghee) in oil. Oil will not splash due to change in density.
  7. While boiling potato add little salt. This will make peeling boiled potato skin easy.
  8. While preparing tea, add little ginger, black pepper and cardamom powder. This gives good taste as well as reduces mouth odor.
  9. Soak entire onion in cold water for few minutes and then proceed with cutting. This reduces your crying!
  10. Planning to cook pasta? Presoak pasta in a sealed bag in water for few minutes and pasta cooks well.
  11. While preparing pastry dough, grate frozen butter straight in the dough. This makes butter distribution even in dough.
  12. Have an apple slicer? Use it for cutting potato into perfect, equal shape.
  13. Avoid using glass cutting boards. They take away knife sharpness and also can be slippery to cut certain vegetables and fruits.
  14. If a recipe/dessert calls for chocolate chips, instead of buying chocolate chips, cut a chocolate bar, it gives unequal distribution of chocolate pieces and makes it more attractive.
  15. To keep lemons for many days, store them in refrigerator. Before using, place them in warm water and then cut to get more juice.

Raw Mango Lentil soup

Soon mango season will start. It is time to prepare mango pickle, mango rasam, mango gojju and other dishes using raw mango.

This year add raw mango lentil soup to your list. It is healthy, contains protein and mango content helps for easy digestion.

What you need?

  1. Raw mango – one medium size
  2. Fenugreek leaves – ¼ cup
  3. Green chilli – 1
  4. Cilantro (coriander) – ½ cup
  5. Curry leaves – 5-6
  6. Ginger – ½ inch
  7. Toor daal (lentil) – Cooked ¼ cup
  8. Garlic – 2 cloves
  9. Salt – As needed
  10. Cumin – 1 tsp
  11. Black pepper – 1 tsp
  12. Oil – 2 tsp.

 Preparation:

  1. Cook toor daal, garlic and little turmeric powder in pressure cooker and allow it to cool
  2. Grate mango and ginger
  3. Using a mixer grind cooked toor daal mix, cilantro, grated mango.
  4. Heat a vessel on medium heat and add little oil. To heated oil add a tsp of cumin, crushed black pepper, one red chilli and curry leaves.
  5. To the above seasoning now slowly add, grinded toor daal – mango paste followed by 2 cups of water
  6. Boil the content and add salt.
  7. Serve hot soup before lunch or dinner.
