 Delicious Rambutan Halwa Recipe

Rambutan is a tropical fruit bearing tree, also known as hairy lychee. Fruit has soft white pulp and is very sweet. Rambutan fruits are commonly available in fruit markets. Apart from eating raw fruit, one can use the fruits to prepare various types of desserts. Rambutan halwa is a simple dessert easy to prepare. Since rambutan is naturally juicy and sweet, the key is to cook it down well before adding the sugar and ghee.

Ingredients:

  1. Rambutan – 15–20
  2. Sugar – ½ to ¾ cup
  3. Ghee – 3 Tbsp.
  4. Cardamom powder – ½ teaspoon
  5. Clove -3-4
  6. Cashews – 8-10
  7. Raisins – 1 Tbsp
  8. Saffron – a small pinch (optional)

Preparation:

  1. Wash and peel the rambutan and remove the seeds completely. Chop the flesh into small pieces.
  2. Blend half of the rambutan into a coarse pulp and chop rest of the pieces.
  3. In a deep-frying pan, heat ghee on medium heat and add the rambutan pulp and chopped pieces.
  4. Cook for about 8–10 minutes, stir frequently. The fruit will release some amount of water. Continue cooking until the moisture evaporates.
  5. Add ½ cup sugar initially and stir well and cook until the sugar dissolves. Fruit mix becomes thin because of water released by sugar.
  6. Continue cooking on low to medium heat, add rest of the ghee. Keep stirring until the halwa becomes thick and begins to leave the sides of the pan.
  7. Now add cardamom powder followed by  saffron and mix well.
  8. In a small pan, add little ghee and fry cashew pieces and raisins to golden color. Add cashes and raisins to halwa.
  9. Continue cooking halwa for another 2-3 minutes or till it becomes glossy in appearance.
  10. Remove rambutan halwa and serve hot or cold.
