Rich Coconut Creme Delight – #RakhiRecipe #JyotiJulka

This is my personal creation. You can call it soup, puree, gravy but for me it is power packed bowl full of health and taste with the richness of coconut and power of paneer and nuts.

Ingredients:

Coconut milk, Amul creme, Paneer – 10 small cubes, Ginger paste, 1 spoon Ginger julienne, Salt, Pepper, Fried Cashews, Whole green chillies, Cashews soaked in 1/2 cup of Milk overnight.

Method:- Fry cashews and paneer separately (keep a side). Take a pan, add little olive oil and put ginger paste in it. Cook well. Now add coconut milk and bring it to a boil. Add Amul creme and boil it again. Now cook till it gets thick. Now blend milk soaked Cashews and pour the mixture into the pan. Keep cooking the mixture. Add salt and pepper. Slowly blend everything with hand blender at very low speed. When it gets thick, add fried paneer cubes and cashews and ginger Julianne. Adjust the thickness with the help of water, whole green chillies (if you like it spicy). Garnish with coriander & serve hot.

Tomato Poori

Tomato poori with potato subji !!

Are you bored of plain pooris? Try a different variety of poori with a good vegetable ingredient. Tomato poori – recipe is here. Tomato has several health benefits and contains lycopene which is an important compound that helps in various conditions – It is a powerful antioxidant that may help protect cells from damage. This is why there is a lot of research interest in lycopene’s role, if any, in preventing cancer. People take lycopene for preventing heart disease, “hardening of the arteries” (atherosclerosis); and cancer of the prostate, breast, lung, bladder, ovaries, colon, and pancreas.

With tomato you can also add good leaves – mint for flavor or cilantro for taste or fenugreek leaves to make it little more healthier.  Kids will love this poori because of its slightly different color. Serve tomato poori hot with potato curry and boondi raita.

Preparation time: 15 minutes.

Cooking : 15 minutes

Ingredients:

1. Wheat flour – 1.5 cup

2. Semolina – 1/4 cup

3. Finely chopped mint leaves- 4-5 leaves or cilantro leaves 3 Tbs or fenugreek leaves 3 Tbs.

4. Thick tomato puree – 1 cup

5. Cumin seeds- 1 tsp

6. Chili powder- 1 tsp

7. Salt- to taste

Preparation:

  • In a bowl mix wheat flour, semolina, salt, chili powder, salt and chopped mint leaves.
  • Add tomato puree in this mix and prepare dough. If needed add little water. Cover and leave dough for about 10 minutes.
  • Make small balls from the dough and dust with flour and roll to make medium sized pooris.
  • On medium heat, heat oil in a pan and drop the pooris gently into the heated oil.
  • Cook pooris on both sides. While cooking using spoon drop little heated oil on top side, so that pooris will puff up.
  • Once cooked on both sides to golden color, remove pooris and place it on paper towels or paper to remove excess oil.
  • Serve hot pooris for lunch, dinner, breakfast or as a snack item with potato curry, raita or pickle.

Understanding Negative thoughts and emotions

When someone tells you that you are negative about life and others – it is a red flag. That means people are watching you. This is the time to understand -“are you having negative thoughts or are you just expressing your emotions”. Many times people cannot differentiate between negative thoughts and natural emotions. You might get confused about your own behavior.

Thoughts and emotions are two different things. Thoughts can fall into two types: Negative or positive. When we have positive thoughts we feel good about it and we naturally spread happiness. When we have negative thoughts about everything around us then people start asking questions – why she/he is so negative all the time?

Negative thoughts: Don’t find fault, find remedy!

Thoughts come to mind whereas emotion is an experience which one is going through, which can be expressed in their behavior. Emotions play out in the theater of the body. Thoughts come to mind by thinking. Our ideas, opinions and beliefs about ourselves and the world around us are nothing but thoughts. While thoughts are shaped by life experiences, genetics, and education, they are generally under conscious control. And, emotion is an experience that our mind expresses for a situation in terms of happiness, sadness, anger, fear or anxious. However, emotions can be destructive too in a different way!

What are negative thoughts? – Recognize your negative thoughts

  • Thinking only bad things happen to you
  • Thinking and imagining bad things to happen to others
  • Exaggerating the impact of an unfavorable event
  • Saying something which discourages people
  • Uttering harsh and meaningless words to a person who is already undergoing through difficult time.
  • Discouraging people not to do something because of jealousy
  • Making a negative evaluation about an ambiguous situation
  • Getting angry even for small errors or things that are really beyond your control
  • Feelings like: I feel unappreciated, I feel fat, I feel like a failure, I feel she doesn’t like me can result in negative thoughts
  • Always finding faults and criticizing others in a destructive way
  • Not appreciating others talent and putting them down with unpleasant words

Separate the negative thought and the natural emotions : Sometimes thoughts are caused because one is feeling sad, hurt, or disappointed about a certain situation and it is natural.  Here you can realize that this thought comes from an emotion you have.  In other words, it is important to recognize your emotions and why are you feeling this way.  Then you can acknowledge your feelings and learn how to deal with them.

It is important to evaluate your thoughts to keep up good relationships. Once you realize that you are thinking negatively, stop and address it.  Instead of concluding by saying “I am stupid”, think, “this action made me think I am stupid”. To overcome negative thoughts first understand that emotions are not your negative thoughts.

Similarly, do not put someone in negative thought person list while he or she trying to express themselves in the form of emotions. Having emotions is a natural thing.  Understand what they are trying to say -is it negative talk or are they just expressing their emotions? When someone is “feeling unappreciated” they usually mean something like “I’m feeling sad” or “I’m feeling angry.” Those emotions are associated with thoughts, which interpret the events in our lives. So we interpret someone’s actions to mean that they don’t appreciate us. It is not a negative thought but an emotion. Talk to the person and understand what made them say that. You may come to know about a situation that they went through.  If the person is negative about life or surroundings, you will understand it. If the person is open minded, tell them how you feel about their negative thoughts.

Work on improving your negative thoughts to make it positive.

  • Try to understand why you are thinking that way.
  • Think -does the thought make sense?
  • Is it a real thought or an illusion you are creating in your head?
  • Does this thought help me?
  • Visualize the good things: Think about good quotes, good people whom you appreciate or think about good qualities of yours.
  • Turn off negative self-talk : Instead of putting yourself down think about good qualities that you have and which you like about. Instead of saying I am not good, say “I am capable, I am good at these things and I am okay doing it”.
  • Think twice before you talk and express your view on someone or something.
  • It becomes a cycle where negative thoughts reinforce negative emotions, which in turn produces negative actions. Cycling and recycling the negative thoughts that were triggered for various reasons can harm a person physically and mentally. Pay attention to triggers- If a certain person is a trigger for you, set boundaries with them.

Stop shopping for negative thoughts in your mind. Take control of your negative thoughts today. It will help you to focus on your success and build a good relationship. Don’t find fault, find remedy!

Yellow cucumber - Jackfruit Seed Curry

Jackfruit seeds and yellow cucumber curry

Have you ever tried using jackfruit seeds in your dishes? If not, try this delicious recipe that contains yellow cucumber and jackfruit seeds. Jackfruit can weigh between 10 and 100 pounds and contains hundreds of seeds that are rich in protein, potassium, calcium, and iron — all of which are important for bodily growth. It can be dried and stored or can be preserved in salt water too. There are many ways to eat jackfruit seeds. One cannot eat jackfruit seeds without cooking. Either you can roast them in traditional stoves or pressure cook them after few hours of soaking. Either way it tastes delicious. This traditional recipe requires combination of a vegetable and jackfruit seeds. Cucumber is the best combination that gives a heavenly taste for this curry.

Next time after eating jackfruit do not throw the seeds, store it and try this curry. It can be side dish for roti, chapati, idli, dosa and best is to mix it with white rice and have.

Ingredients:

  • Yellow cucumber medium size- 1
  • Jackfruit seeds 1 1 cup
  • Coconut (grated) ½ – 1 cup
  • Toor dal (Pigeon pea) ¼ cup
  • Tomato medium size -1 (optional)
  • Onion medium size- 1 (optional)
  • Green chillies 3-4
  • Garlic cloves 4-5 (optional)
  • Curry leaves- 1 strand
  • Tamarind -grape size
  • Red chilli powder- ½ tsp
  • Coriander powder- ½ tsp
  • Turmeric powder- ¼ tsp
  • Cumin seeds -¼ tsp
  • Chana dal -¼ tsp
  • Urad dal -¼ tsp
  • Fenugreek seeds 5-10
  • Asafoetida- pinch
  • Jaggery (powdered)- 1tsp
  • Salt
  • Oil

Method:

1. Remove the outer skin of jackfruit seeds. Soak it overnight and pressure cook with little salt (it needs 7-8 whistles)

2. Wash and cut the cucumber and discard the seeds. Cut into pieces 1.5 inch pieces. Pressure cook with little salt and water.

3. Wash and soak toor dal for 1 hr and pressure cook.

4. Soak the tamarind and extract the juice.

5. Heat oil in a frying pan, add chana dal, urad dal and fenugreek seeds. Fry them. Add green chillies, fry. Add cumin seeds, curry leaves, garlic and onions fry them.

6. Add red chilli powder, coriander powder, turmeric powder. Mix well.

7. Add grated coconut and mix well. Switch off the stove. Let it cool.

8. After cooling grind them along with tamarind extract and water into smooth paste (masala).

9. Heat oil in a pan, add mustard and asafoetida. Add the ground paste (masala) and little salt, let it boil. Once it starts boiling add chopped tomato. Cook for few minutes. Add cooked jackfruit seeds, yellow cucumber and toor dal. Mix well. Add jaggery powder and cook for another 5 minutes in low heat.

10. Curry is ready. It goes well with rice.
